WHIPPED RICOTTA TIRAMISU CANNOLI

 


INGREDIENTS

1½ CUPS (360G) RICOTTA

1 CUP (250ML) THICK (DOUBLE) CREAM

1½ TABLESPOONS STRONG ESPRESSO COFFEE

¼ CUP (40G) ICING (CONFECTIONER’S) SUGAR, SIFTED, PLUS EXTRA FOR DUSTING

8 LARGE CANNOLI SHELLS

2 TABLESPOONS FINELY CHOPPED CHOCOLATE-COATED COFFEE BEANS

METHOD

Place the ricotta, cream, coffee and sugar in a large bowl and whisk until thickened. Place in a piping bag fitted with a 1.5cm star nozzle. Pipe the ricotta mixture into each cannoli shell, sprinkle with the coffee bean and dust with the extra sugar to serve. Makes 8.

Be Creative and innovative. Think differently and positively.

 


A blind man sat on the steps of a building with a hat by his feet. He held up a sign which said: “I am blind, please help.” There were only few coins in the hat.

A woman was walking by. She took a few coins from his pocket and dropped them into the hat. She then took the sign, turned it around, and wrote some words. She put the sign back so that everyone who walked by would see the new words.

Soon the hat began to fill up. A lot more people were giving money to the blind man. That afternoon the woman who had changed the sign came to see how things were. The man recognized his footsteps and asked, “Were you the one who changed my sign this morning? What did you write?”

The woman said, “I only wrote the truth. I said what you said but in a different way.”

What she had written was: “Today is a beautiful day and I cannot see it.”

Do you think the first sign and the second sign were saying the same thing?

Of course both signs told people the boy was blind. But the first sign simply said the boy was blind. The second sign told people they were so lucky that they were not blind. Should we be surprised that the second sign was more effective?

GOD GRANT ME THE SERENITY
