Vinnige groentekaasgebak

Genoeg vir 6 mense
Gaarmaak: 20 min.
Bereiding: 5 min.
2 naeltjies
1 ui, gehalveer
500 ml (2 k) melk
1 lourierblaar
2,5 ml (½ t) swartpeperkorrels
30 g botter
xx ml (xx t) meel
60 ml (¼ k) room
5 ml (1 t) heelkorrelmosterd
175 g beleë cheddarkaas, gerasper
1 kg gemengde groente, geblansjeer (blomkool, broccoli, wortels)
Voorverhit die rooster.
1 Steek die naeltjies in die ui-stukke. Plaas in ’n pan saam met die melk, lourierblaar en peperkorrels en bring oor matige hitte tot kookpunt.
2 Verwyder van die hitte en sit 5 min. eenkant. Gooi die melk deur ’n sif in ’n beker en gooi die soliede stukke weg.
3 Smelt die botter in ’n kleefwerende pan, voeg die meel by en kook 1 min. oor matige hitte terwyl jy roer. Verwyder die pan van die hitte en klits die melk geleidelik in. Sit die pan terug op die hitte en bring tot kookpunt terwyl jy 10 min. roer. Verwyder die pan van die hitte en roer die room, mosterd en 100 g kaas in.
4 Plaas die groente in ’n oondvaste bak en giet die kaassous oor. Strooi die oorblywende kaas oor en rooster 5 min. of tot die kaas borrel en goudbruin is.

Bacalhau Acebolado



Ingredientes:

Azeite suficiente pra ficar bem suculento
1 colher sopa margarina
2 cebolas grandes
3 dentes de alho
1 tomate grande ou 2 pequenos
1 folha de louro
Massa de pimento
Massa de alho
Molho de tomate
Salsa (usei desidratada, dessas de vidrinho)
1 posta de bacalhau (a minha era bem nutrida)
10 batatas de (tamanho médio a grande)
2 ovos
Piripiri (ou pimenta do reino moida)
2 colheres de nata

Modo de fazer:

1. Corta-se a batata em pedaços médios e coloca pra cozer com um pouco de sal. Aproveitei e lavei bem os ovos e coloquei pra cozinhar junto das batatas.
2. Corta-se as cebolas em rodelas ou meia lua, o tomate em tiras e o alho em rodelinhas finas.
3. Como usei salsa de vidrinho, dessas desidratadas, tive de deixar um tempinho hidratando, pra ficar com aspecto de fresca. Numa xícara coloquei 1 colher de sopa de salsa de vidrinho, 2 colheres de sopa de molho de tomate, 1 colher de sobremesa de massa de pimento e uma colher de sopa de água... Mexi bem e deixei reservado.
4. Refoguei a cebola e o alho no azeite e margarina e em seguida adicionei os tomates em tiras, a folha de louro e uma colherinha de massa de alho. Refoguei mais um pouco.
5. Adicionei o molho de tomate reservado com salsa e massa de pimento, deixo uns 3 minutinhos.
6. Adiciono o bacalhau em lascas ao refogado, sempre em fogo baixo, continuo refogando.
7. O tomate solta bastante líquido, e qdo reduzir um pouco adiciono as batatas já cozidas e refogadas.
8. Continuo mexendo, adiciono piripiri à gosto, verifico o sal.
9. Desligo o fogo, coloco as natas, uno bem.
10. Coloco na travessa, por cima os ovos em rodelas, e queijo parmesão ralado.
