6 carrots
1 green pepper, 1 red pepper, 1 yellow pepper (or any combination)
3 onions (I use red and white)
1 cucumber
750ml white vinegar
750ml mayonnaise
1 tablespoon sugar
salt and pepper to taste.
Grate carrots, chop all other vegetables fine, put into a glass container.
Pour vinegar over veggies and leave overnight.
Drain and pat dry.
Add mayonnaise, sugar, salt and pepper to vegetables and mix well.
Scoop into sterilised bottles and seal.
Keep in fridge
Also very nice with a few peppadews in there for some kick.
