- 1 1/4 lb ground turkey
- 1 medium yellow onion, diced
- 1 large zucchini, shredded
- 1 large celery stalk, finely chopped
- 3 medium carrots, shredded
- 1 red bell pepper, finely chopped
- 1/2 lb mushrooms, chopped
- 4 garlic cloves, minced
- 3/4 cup old fashioned rolled oats
- 1/2 cup unsweetened applesauce
- 2 tbsp tomato paste
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup liquid egg substitute
- 1/2 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- Preheat oven to 350 degrees F, in a nonstick skillet saute vegetables
and garlic with a small amount of olive oil or cooking spray, mix all
ingredients together in a large bowl, place into loaf pan and bake for
70 minutes. Enjoy!
