Ingredients
- 3 cups shredded carrots
- 1 1/3 cups brown sugar
- 2 cups plain flour
- 1 tsp salt
- 1 tsp cinnamon powder
- 1 cup oil
- 2 eggs
- ½ cup ground almonds
- 3 ozs pecan nuts
- 2 tsp baking powder
Method
- 1. Mix all the ingredients together.
- 2. Bake at 350F for approximately 1 hour.
- 3. Serve it with icing sugar on top.
