Apple and raisin cake



INGREDIENTS
  • 5 apples, any variety, peeled, cored, and chopped
  • 1 cup raisins
  • ¼ cup sugar
  • 1 tablespoon ground cinnamon
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup vegetable oil
  • 2 cup light brown sugar
  • 4 large eggs
  • ¼ cup orange juice
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

  PREPARATION

  1. Heat oven to 350°F. Generously coat a baking pan with non-stick cooking spray. Set aside.
  2. Mix 1 tablespoon ground cinnamon and 1/4 cup sugar together in a small bowl to combine. Toss apple chunks, raisins with sugar and cinnamon blend. Set aside.
  3. Whisk flour, salt, and baking powder together in a large bowl. Set aside.
  4. In a separate bowl, whisk oil, 2 cup brown sugar, eggs, vanilla, and orange juice until well blended. Pour wet ingredients into dry and stir until fully incorporated into a batter.
  5. Pour half of batter into baking pan, top with half of apple mixture. Pour second layer of batter over apples, then top with remaining apples.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 45 minutes. Cake is ready when a cake tester comes out clean from the bottom and middle layer of cake.
  7. Dust with powdered sugar prior to serving.

Found this 1970 edition French clothing catalogue at a antique shop.



Grape fruit, orange and lemon marmalade



 1 Large Grapefruit

2 Large Oranges

2 Lemons

850ml Water

1.8kg Sugar

Wash the fruit and cut into four.

Put fruit in a pan with the water and simmer for 1 hour

Remove the fruit and cut up finely, discarding the pips.

Return the chopped fruit to the pan containing the liquid.

Add sugar and heat gently, stirring occasionally until the sugar has dissolved.

Bring to a full boil until setting point.

Remove from heat, allow cooling then pot and cover in the usual way.

Mosaic Project. Recycled old cooking pot.


I took an old cooking pot that could not be used any longer as it had worn off at the bottom. I bought some old plates at a car boot sale and did mosaic art. There a lot of options available to decorate such as outdoor furniture, chairs, old garden planters which I will share soon, this is a great activity for weekends and especially with social distancing where you can involve the kids too.
