Raku

Fish Cakes

Ingredients

1 lb of cod fillets
2 medium-sized russett potatoes
1/4 cup chopped fresh parsley
2 Tbsp freshly grated Parmesan cheese
2 garlic cloves, finely chopped.
1 onion finely chopped
1/2 teaspoon pepper
salt to taste
2 eggs, lightly beaten
Oil for frying

Method

1  Boil and mash the potatoes, let them stand.
2 Boil the codfish – you should boil the fish until it easily flakes. Drain the water from the fish and then be sure to flake the fish with a fork. Whilst you are flaking the boiled cod you should also remove all the bones.
3 Next, mix and knead the flaked codfish with the mashed potatoes and the rest of the ingredients (the lightly beaten eggs, the cloves, parsley etc…) together by hand. If the mixture is too crumbly, add another egg.
4 Shape the mixture into cakes and fry them on medium high heat in a skillet coated with oil.
Makes 12 fish cakes. Serves 4-6.

THE SERENITY PRAYER

GOD GRANT ME THE SERENITY
TO ACCEPT THE THINGS I CANNOT CHANGE;
COURAGE TO CHANGE THE THINGS I CAN;
AND WISDOM TO KNOW THE DIFFERENCE.

LIVING ONE DAY AT A TIME;
ENJOYING ONE MOMENT AT A TIME;
ACCEPTING HARDSHIPS AS THE PATHWAY TO PEACE;
TAKING, AS HE DID, THIS SINFUL WORLD
AS IT IS, NOT AS I WOULD HAVE IT;
TRUSTING THAT HE WILL MAKE ALL THINGS RIGHT
IF I SURRENDER TO HIS WILL;
THAT I MAY BE REASONABLY HAPPY IN THIS LIFE
AND SUPREMELY HAPPY WITH HIM
FOREVER IN THE NEXT.
AMEN.
